Gluten free meal

Our bowling wiigue gets together every Tuesday. Yesterday was our turn for food so instead of getting pizza I decided to make a Katie friendly meal.
I have gotten two gluten free books:
Gluten-free Baking Classics by Annalise G. Roberts and
Cooking for Isaiah by Silvana Nardone

I decided as we all love chicken, except Chris who is a vegetarian, that I would make a chicken dish. Silvana's book has a recipe for Frito breaded oven fried chicken tenders.
They were pretty yummy, next time I will season/marinate the chicken before breading it.
Katie really enjoyed them!
For dessert I tried out another one of Silvana's recipes: A chocolate covered marble cake. It turned out pretty dense and it tasted ok. This is not the best gluten free dessert we have tried so far. In fact I think this was everyone's least favorite of the 3 we have tried so far. The cook book is also dairy-free, so as I try out recipes I will probably change something along the way as none of us have a problem with dairy.


We'll keep trying things out and see what we can find and I'll blog about it along the way.
